We are often asked why sometimes we make schnapps and Edelbrand and sometimes spirits. The Forest Raspberry Spirit is a good example of the experience of the distiller being decisive in choosing the proper processing process for a particular fruit.
Pipped fruit such as apples and pears and fruit with stones such as plums and apricots are mixed together and distilled into a fruit brandy. So doing the raspberry is transformed into a spirit and as such unfolds its full aroma. The small intensive forest raspberries are then placed in pure alcohol for a few days. Through this careful maceration process we gain a fine fruit aroma, one which is completely natural and without artificial additives offers an incomparable and distinctive taste.
After this comes a careful and slow distillation. The result is a honest and intensive raspberry spirit, whose typical berry scent evokes forest summer walks.
